I will have to ask hubby to write down the one for the double choc chip cookies as he told me ingredients to get and talked me through it as he is a baker :oops: i was sooo determined that he wouldnt get involved though and ended up baking them a little too long I think (sorry Caroline)

For the mini ones i used this recipe:

Choc chip cookies

125g butter, softened
100g light brown soft sugar
125g caster sugar
1 egg, lightly beaten
1 tsp vanilla extract
225g self-raising flour
½ tsp salt
200g chocolate chips

1. Preheat the oven to 180°C, gas mark 4.

2. Cream butter and sugars, once creamed, combine in the egg and vanilla.

3. Sift in the flour and salt, then the chocolate chips.

4. Roll into walnut size balls, for a more homemade look, or roll into a long, thick sausage shape and slice to make neater looking cookies. (I made these much smaller so there was a different size for the children :wink: )

5. Place on ungreased baking paper. For them to be soft and doughy then bake for just 7 minutes, till the cookies are just setting. Otherwise cook for 10 minutes until just golden round the edges.

6. Take out of the oven and leave to harden for a minute before transferring to a wire cooling rack. These are great warm, and they also store well

Ruth, the kids loved having a different size to the adults. India said, look Mum some for us! :cake: :cake: :cake: I went to take a pic yesterday but they had all gone :oops: :widesmile:

Here is the recipe for the caramel squares I made Ruth.First time I made them and will be doing some more today. :cake:

Double Chocolate Pecan and Fudge Brownies

115g dark chocolate
115g butter
300g caster sugar
2 large eggs
1 tsp vanilla essence
140g plain flour
2 tbsp cocoa powder
50g white chocolate chips
50g fudge pieces
50g pecans

Melt the chocolate and butter together. Let cool slightly, then stir in sugar and vanilla, then add eggs one at a time and mix gently until smooth. Sift in flour and cocoa powder and mix, then add pecans, chocolate chips and fudge pieces and stir until it's all a big chocolatey goo. Pour into a greased, lined 20x20cm tin and spread out. Hand mixing bowl and spoon to a small child to lick clean. Bake brownies at 180 degrees for 30 mins, leave to cool in the tin for 10-15 mins before turning out.


Chocolate - covered Oaty Biscuits

I must admit I used louise's recipe here, I make them a lot :widesmile:

DH suggested dipping them in melted chocolate, so I did, and then added chocolate stars.

150g plain flour
1/2 tsp salt
50g caster sugar
125g dairy free margarine
1 tsp vanilla essence
50g dark choc chips

Preheat the oven to 150oC.

To make the shortbread, sift together the flour salt and sugar (plus vanilla essence). Rub in the margarine until the mixture combines, using your fingertips or the back of a wooden spoon. When the mixture is combined, knead lightly for 1 minute and place the shortbread dough in the fridge for 30 minutes.

Cut or shape the cookies as required into pieces 1cm thick and arrange them on greaseproof paper on an oven tray.

Sprinkle the chocolate chips over the cookies and press into dough.

Cook for 25 minutes or until the biscuits turn golden. Take the biscuits out and leave to cool or you'll burn your mouth! These biscuits keep well.

I doubled the quantities though :cake:
