For years when I had long curly hair I used a home made salt water solution to define curls. This was after experimenting with everything commercially available and giving up!

Discovered salt water was the best when I was living in Cyprus and swam every day. No good for straight hair I'd not think, plus you need to wash and condition it daily.

Flaxseed hair gel. Never used it myself but I have heard great things about it.
