A favourite in our house!
Ingredients
2 roughly chopped Medium Onions
(4-6) potatoes, cubed
2 garlic cloves, finely chopped
1 tsp of fresh chopped rosemary finely chopped
12 beef meatballs
handful of peas
560g Passata
Olive oil
Recipe.
Chop Onions, rosemary and garlic and put to one side.
Peel and chop potatoes and put in a pan of water with a pinch of salt. Pop them on the hob on a medium heat for 10 minutes.
Whilst the potatoes are cooking, heat a little olive oil in a pan (a large regular pan, not a frying pan). Add the meatballs and season. Brown off the meatballs for about 5 minutes. Once browned, remove the meatballs and leave on a plate. Drain the excess oil from the pan.
Add the onions, rosemary and garlic to the pan and brown for 5 minutes. Once these are soft and tender add the passata and stir. Do not let it boil, just simmer for 5 mins or so until the potatoes are soft.
Once the potatoes are done, drain the water and add the potatoes to the passata in the other pan. Also add the meatballs and cook for a further 5-10 minutes or until everything is fully cooked through. Add the peas a few minutes
Season.
Serve with thick crusty bread. Enjoy!!
