Back to school meal ideas!

With back to school looming this week I feel like I need some inspiration for school night healthy but quick and easy (we will now be having an hour of driving to get Josh every evening :roll: ). What are your family favorites?

Jamie's hit and run chicken always goes down well here. It's not quick but it is easy. I'll find a recipe link.

E loves tuna-salat just simple tuna, lettuce, tomato and cucumber :thumbsup:

Slow cooker!! I use mine loads, especially as the weather cools down.

Other than that
Pesto pasta
Pasta with cream cheese and ham
Roast veg (done in advance) and couscous

I like to make shepherds pie but with quorn. I make a massive load then freeze it in small portions

I like the idea of minestrone soup and I had it once and liked it but for some reason always worry I won't like it :roll: :lol: Do you make it yourself @ems101

Thinking about it we should be having lighter meals in the evening as the kids get a 3 course hot meal at lunch (although they don't always eat that!) and will all my pumpkin / squash growing I can do lots of soups :yahoo: and currys - especially now I have my slow cooker :yahoo:

Yeah, I used to follow a recipe but kinda make it up now. It's basically a slightly spicy veggie soup with pasta in it! Nothing not to like! It's so cheap and filling and healthy (minus the bread and butter!!)
