The science is that it creates a osmotic gradient. So on one side a super strong salt (and therefore LOW water) and on the other (the blood cell) a weak salt (and therefore HIGH water).
water will move from where there is a lot to where there isnt much, so FROM the blood cell TO the salt water. The blood cell then shrivles and 'drops' off the fabric.
i imagine, although totally guessing here, that adding salt to a dye solution also increases the osmotic concentration so that the water in the dye comes out of the dye solution and therefore allows the dye to 'stick' to the material.
