Whole turkey for me
My tips for a very simple/ easy turkey:
Peel and quarter/ half a few onions, and quarter a few lemons and stuff the carcass to keep it moist. Rub butter/ spread all over Turkey and put in a tin with a tent of foil over the top to stop it drying out. Remove tin foil for 30 mins at the end.
Cover in foil and rest in a big dish ( to stop juices running everywhere) and rest till ready to carve.

Once you take your Turkey out you can put everything else in the oven.

This has never failed us for Turkey or chicken. I think it's the Jamie or delia way.

We are having goose.

If I had to have turkey it would be a whole bird. I like making soup too much and Jacob prefers the dark meat.

We'll have ham on Xmas eve and salmon.

We have old friends around for 12th night, so there will be another feast then too, but I've not planned that far ahead yet ...

I'm veggie so will be tucking into nut roast but rest of the family has Turkey. Mum got a crown year before last and seemed much better... Easy to carve, no fiddly bits to take out/go around, seemed like lots more 'usable' meat.
A ham is often a hit too and more popular stuck in sandwiches / pasta dishes etc afterwards.

Thanks for all your help! I've ordered a whole bird. Giblets are separate so at least that's one job done.
