Making mince pies - when?

I made my own mincemeat a while ago so was thinking about making some mince pies now (have eaten a packet DH bought :oops: ) but I have a few Q's.

Which pastry is best, shortcrust? Feel free to link to recipes :wink:
How long will they keep once made?
Can I freeze them?

I make these every year and the pastry is lovely and easy to make. I have never frozen them though as I always make them at the last minute (the final thing to get me in the Christmas mood lol).

We also always make the cranberry "mincemeat" as I can't stand the regular stuff.
Tastes yummy with a marzipan star on the top as well (added after they've cooked) if you're a marziapn addict like me... :oops:

I've made a boozy cranberry mincemeat this year which is a Mary Berry recipe. I have to say it smelled lovely when I was making it. I normally make the suet free on in the Nigella Domestic Godess book, Hettie Potters I think.

You are like my sister when it comes to marzipan. As kids, I used to pick the marzipan layer off my cake and give it to her to eat and she always obliged!

Thanks :oops: (There may or may not be some in your parcel :wink: )

@Shaunie They keep for 3-5 days and possibly longer although they're eaten too quickly :oops: :giggle: And yes you can freeze them for up to 3 months.

Hi Louise,

Just wondering - in your recipe, do 36 mince pies take 3lbs of mincemeat? I'm sorry - I have no idea how much would be a pound! :) Just trying to work out how much I'd need to make as I wouldn't want to end up with tonnes of leftover mincemeat. :D

:lol: I never used to like them until DH made me eat a warm one with clotted cream (he's from Devon :wink: ) and now I love them!
