Low carb pancakes!

Yum! I'm trying to go low carb and after lots of browsing last night decided to try to low carb pancakes. I didn't have an egg (how is that???) so I had to wing it so not as low carb as it should have been as I added some buckwheat flour and banana to make it stay together! I served them with creme fraiche and blueberries with cinnamon and agave syrup.

@docmaggoo I know you are low carbing it - what is your fave recipe?

Not sure there is such a thing as low carb pancake unless flourless. Ive got an oat and banana recipe ill try it out later x

Most of the recipes I've seen use egg and coconut or almond flour. I used almond meal, some dessicated coconut (didnt' have any of the flour), baking powder, a table spoon of the buckwheat (which isn't actually a wheat I was reading and low GI), I also added the banana as needed to bind with not having the egg so that would have upped the carbs too but still far, far less that some toast or regular pancakes!

Thank you that chart is really really useful for me! I need to source some coconut flour really and perhaps some bulk almond. I currently buy at Lidl which seems to be the cheapest.
I was doing an amazing almond flour based banana bread when I was pregnant and really counting the carbs, it was amazing and only 12 carbs per slice! I keep meaning to find the recipe again and I'll post when I do @littlesez
