Using home grown herbs

Postby ericaj1 » Sat Feb 23, 2008 8:14 pm

i planted myself a little herb garden last autumn but up to now haven't actually cut any off for cooking use. My question is do I just cut them off and use the fresh leaves or do I have to dry them before use?

You can use them fresh, we do with ours all the time. But be aware that you often need A LOT less with fresh than dried. Especially with things like marjoram (oregano) as it's VERY strong!

Fresh is sooooooo much better than dried. Also, if it gets to the end of the season and you think they might all shrivel up and die, harvest it all (apart from what the plant needs to live) and freeze it, it's still much better than dried.

Next door planted rosemary right by our fence, it's very handy...
