Make sure you bagsy the corner pieces then if you like chewy. DH eats all the corner pieces in a flash if I'm not careful :cake:

As requested by @northernruth

225g s-r flour
30g best cocoa
200g caster sugar
100g unsalted butter
200g condensed milk
100g best quality dark chocolate
2 eggs (large) beaten

Pre-heat oven to gas 4 / 180C, put kettle on and prepare 20cm springform tin (or 2 20cm sandwich tins).

Sieve flour, cocoa and salt together.
Put sugar, butter, condensed milk and 100ml boiling water and chocolate (broken into small pieces) into a saucepan and heat until melted and smooth.
Stir this mixture into the flour mixture, then beat in the eggs.
Pour into tin or tins and bake for 35-40 mins (less if using 2).
The top should feel firm, but there should be some crumb on a cake tester.
Cool in tin for 10 mins before turning out.

Nigella suggests using a ganache to ice, but you can do what you want, really. She also tells you to slice the single cake in half horizontally, once completely cool, before sandwiching it together with the ganache, but obviously you can do as you like!

@northernruth random resurrection of a thread, but chewy vs crunchy flapjack is all about cooking temp and times, higher and shorter for crunchy, lower and longer for chewy (I think) I googled it once

Definitely agree with this. My recipe makes either. If you cook in a shallow tin on gas mark 5 for 15/20mins then its crunchy but in a deeper tin on gas mark 2 for 30/35 mins and its lovely and chewy.

Yes, I cook mine at a lower temp, 160c, and its chewy not crunchy.
