Tasty low fat veggie recipes please

Indian is one we do a lot already, we've just had to cut out the coconut milk based curries in favour of tomato based.

I made a nice risotto from a Hugh F-W book recently, it was based on a tomato rather than creamy sauce, you'd just need to omit the mozzarella

I am a massive Quorn fan, I absolutely love their mince, pieces, ham, burgers, you name it... it's all low fat too.
I can't eat tofu unless it's been deep-fried though.

Can Eoin eat eggs? They're not massively fatty and make a lentil curry luxurious with some lime pickle on the side.

I also adore Hugh F-Ws version of a pot noodle, masses of veg with veg stock, a hint of sugar and some soy sauce with a nest of egg or rice noodles plus I like to add chilli flakes which is a great way of getting flavour with no added fat.

He can eat eggs as long as they're cooked well, he has an intolerance/allergy to the albumen in the egg whites if they're not fully cooked.
