Dairy free BLW recipes?

I need inspiration!

We are doing BLW with LO but everything has to be dairy free for me and her (not DH but I'm not cooking separately for him) and I'm seriously struggling for ideas now it's all hot and summery. All the nice summer salads and pasta dishes seem to contain cheese or milk and if I use soya alternatives DH tends to not like it because 'it tastes odd'.

Anyone have any ideas? We do eat meat but not a lot so staples are tomato pasta, grilled chicken and veg, herby potatoes, fishcakes.. I need to mix things up a bit!

TIA

Is it all dairy you have to avoid - or just cows milk?

Are eggs off the menu too?

@louise - tagging Louise in because I know she's dairy & soya free with her & Mia.

To be honest I haven't tested goat or sheep milk yet. The reaction when I eat dairy and then feed Hazel is awful so I've just avoided everything dairy. I might risk it later on but she is still so little.

Eggs are fine :) Thanks.

There are loads of pasta sauces that are tomato based rather than cheese based and plenty of salads without cheese/milk in. Buffalo mozzarella is fine for us so I use that in some salads. I also do a low fat dairy free carbonara. These are some of my favourite quick easy summer recipes -

Pasta salad
300g farfalle (pasta bows)
200g frozen peas
1 large tomato
10 sundried tomatoes in oil
2 tbsp olive oil
2 tsp white wine vinegar
1 garlic clove
large handful fresh basil leaves
85g pack prosciutto or salami

Boil the pasta in salted water for 8 minutes then add the peas, return the water to the boil and cook for 2 minutes more until the pasta and peas are tender. Tip into a colander over the sink, cool the pasta and peas under the cold tap then drain.

While the pasta is boiling roughly chop the tomato and put in a food processor with half the sun-dried tomatoes, the olive oil, vinegar, garlic and about 8 basil leaves. Season with plenty of salt and freshly ground pepper then whizz until smooth. Tip into a large salad bowl.

Add the pasta and peas to the dressing, roughly slice the rest of the sun-dried tomatoes and add to the pasta with the remaining basil leaves. Tear in the prosciutto or salami and toss everything together.

Bean and chorizo salad
250g cherry tomatoes , halved
2 tbsp olive oil
1 x 400g tin cannellini beans
50g chorizo , sliced and quartered
1 small red onion , diced
1 tbsp sherry vinegar
1 tbsp honey
50g bag salad leaves

Heat oven to 180C/fan 160C/gas 4. Put the tomatoes on a baking tray and drizzle with some of the oil. Season and roast for 20 minutes and then remove.
Drain and rinse the beans. Tip into a bowl.
Fry the chorizo in a non-stick pan until crisp, then drain on kitchen paper. Wipe the pan clean and add the olive oil, onion and seasoning. Cook for 5 minutes, then add the vinegar and reduce by half. Add the honey and whisk to emulsify.
Pour the warm dressing over the beans and mix. Add the chorizo, tomatoes and salad leaves and mix again.

Carbonara
250g spaghetti
2 tbsp olive oil
1 onion, finely chopped
1 clove garlic, finely chopped
6 rashers of streaky bacon, chopped
2 eggs

Boil a large pan of water and cook the spaghetti following the packet instructions. Meanwhile, heat the olive in a small frying pan and cook the onion, garlic and bacon for 5-7 minutes until golden and beat the two eggs together in a small bowl.

Drain the spaghetti, reserving a small amount of the water. Add the egg mixture to the pan containing the garlic, bacon and onion along with the water and cook on low for a couple of minutes. Stir continuously or the egg mixture will scramble. Add a sprinkling of ground pepper to taste.

Thanks, they sound yummy :) I did carbonara last night using soya cream but it tasted weird. I didn't think of just using egg for the sauce.
