Meals that are quick to prepare and quick to cook?

I need a balanced meal plan for the next 6 months where im not supposed to be doing much so I can just quickly sort dinner etc when im in agony ( which is worse by the end of the day) so we are eating well but I'm not standing peeling/chopping or stirring too long!

I have a slow cooker, a gas hob, gas oven and gas grill, toaster, hand held blender thing for soups etc and a bread maker of any of that is useful lol the meals are just for me and the kids, will try anything really but not too keen on lamb

ATM its alot of pasta and sauce, soup and sandwiches, pizza, beans, egg and toast etc as its just easier but it's so processed :(

What we have started to do is to buy a whole chicken when we do our shop, roast it and then strip the chicken off and it is lasting us a good 3-4 meals as we are also trying to bulk up with veg and cut down on our meat in take. It makes cooking meals a lot quicker as you aren't waiting for the meat to cook, also works out cheaper than buying chicken breasts :wink: For example this week, hubby roasted chicken on Wednesday, we had Thai green curry on Wednesday night, Chicken fajitas last night and then chicken stir fry and noodles tonight and they were all really quick to cook and the only thing that took time really was cooking the rice for the curry (although you could buy pre cooked and bung it in the microwave to cut time), and then chopping up a few peppers, onions etc :thumbsup:

I am sure there are loads of other quick meals we make, but will come back if I think of any more x

beaney casserole-
two tins of any beans you fancy such as black eye beans, cannellini, harricott
1 whole broccolli, 4 carrotts chopped, seasonal herbs,
1 tin of tomatoes, tomatoe puree and a dollop of marmite.
put it all in an oven dish, stir and bake for about 40 mins on 180`c

frittata- left over veg and pots from a roast
slice it all and place in oven dish, pour over however many whisked eggs are needed to just cover the veg in the dish and bake for 30 mins on 180`c

ricey salads and stir frys, easy and quick- lots of veg and crack an egg or two in to stir at the end for protein.

Roasted veg couscous - we roast chunky veg with garlic n olive oil with mixed herbs then mix it with cous cous. It's nice with roasted chicken breast or lamb steaks etc.
We have had a lot of salads lately!!

The slow cooker is your friend. You dont need to just have soups and stews in it, far from it. You can cook porridge overnight in it so its ready for when you wake up, you can roast whole chickens and joints in it too. We do the same as hannah with the chicken, apart from i cook it in the slow cooker with 250ml of veg stock. You end up with about 1lt of chicken stock then as well as the cooked chicken so you can make chicken noodle soup, or use it in risoto/stews etc. I also cook a pork joint in it. Put a saucer turned upside and then ut the pork on top of it. cook on high for about 4-5 hours. Once cooked you can shred it with 2 forks. dont try cutting it, it just falls apart lol. You can just eat it as is, or I like making a chineese sticky bbq sauce and then cooking the shredded meat in the sauce for another 4 hours on low. It is AMAZING. We have it in sarnies with colslaw on it and they are gormet scrummy you want to eat forever sarnies :giggle:

I was in so much pain at the end of my last pg so in the morning when I was in less pain, I would make lots & lots of tomato sauce and put in tubs to freeze. It was then so easy to fry mince, add the sauce & boil some spaghetti. I also made lasagne & froze it. The sauce can be usede for meatballs, chilli ect & they are all quick meals.

Other than that, when I was really bad we had baked potatoes :D

I'm at this point now too, but can't stand without wanting to cry, and simultaneously puke, so reluctantly gave up on even simple cooking and asked dh to get some M&S multibuy meals when he was in town today.

He forgot. :twisted:

So. Soup and cereal it is!
