I have the Hummingbird Bakery book and their cupcakes are lovely.

Have to say I always just do 110g SR flour, 110g unsalted butter, 110g caster sugar, 2 large eggs, 1tsp vanilla extract and 1 tsp baking powder baked inna preheated over of 160 for 20 mins they always get compliments and it couldn't be eaiser.

This is similar to mine, although I'd never get away with that quantity! :hohoho: I tend to have to double it at least! :lol: (225g flour etc and 4 eggs usually) (I think I posted mine on Kirsty's thread that she linked to above)

I have it too and some of the recipes are lovely. A few of them aren't particularly nice though IMO :oops: My mum bought me a fab book for Christmas with 200 cupcake and muffin recipes in and the ones I've tried from there have all been delicious.
