Impressive but easy meals

We are away next week with the IL's, BIL and gf.

We are self catering and taking turns to cook. I want to cook something for all of us that's really tasty, impressive looking, but minimal effort.

Ideas please!

This goes down very well here and is on the plate in 15 mins! Easy to get all the ingredients from the supermarket too.

There is another Nigella recipe I do which is lamb chops put in a baking dish with lcubes of (raw) baking pots, sprinkled with mint, chilli and lemon zest. Squeeze over lemon juice and some olive oil and bake at 150 for at least an hour. Serve with crusty bread.

Salmon linguine is one of ours, though we cheat and use spaghetti instead. Cook spaghetti. Separately gently heat single cream, knob of butter, packet of smoked salmon trimmings and season. We also add sliced radishs/mange tout/mushrooms to the sauce mix. When spaghetti is cooked mix with the sauce and serve.

DH makes a great pasta puttanesca from a Jamies 30 minute meals recipe - uses tinned tuna and anchovies, chillis, capers, and a bit of fresh tomato sauce - I'm sure you'd get the recipe on line. It is delicious (and I'm not a massive tuna fan!)
