Chicken and chorizo stewDice 2 chicken breasts and skin and slice a whole chorizo 'ring'. Brown with some olive oil in a hot pan (I never do this now other than with sausages and actually think most dishes taste better if you just chuck it all in!!). Add to slow cooker with 3 cloves minced garlic, large sliced onion, mixed sliced peppers (I use frozen if I've got a bag in, if not fresh is also fine)a can of chopped tomatoes, a can of butter beans/canellini beans/chickpeas (I use whatever I have in!), a generous squeeze of tomato puree, 400ml water, salt, pepper, 2tsp smoked paprika, 1 tsp mixed herbs. Cook on low for 6 hours ish. Serve with rice or crusty bread!
Chocolate Orange rice puddingKnob of butter (or dairy free alternative)
4oz pudding rice
2 pints milk (we use almond milk as a dairy alternative)
2oz hot chocolate powder
2oz sugar
grated rind and juice of 2 oranges
Butter the dish, put everything in the dish with a knob of butter and stir it. Cook on low for about 5-6 hours.
