Gingerbread

Ive just whipped up a quick ginger bread dough with DD, but DS woke up in the middle and i think ive miss measured something as the biscuits have spread far too much, not kept their shapes at all and more than a little crunchy!

HELP! How can i rectify the left over dough?

Here's my remedy, cook and eat all the stuff you've already made... and start again :hohoho:

yep cook first then cut out shapes then start again

I find with gingerbread you have to roll it quite thin or it puffs up and spreads iykwim :)

Yep, this. Also freezing or refrigerating the dough so its cold when rolling out can help too provided you get it in the oven fairly quickly.

I always roll straight onto the baking paper as I find the mixtire sticky. I also use a fair bit of flour when rolling and chill my mixture in the fridge before hand. X

I hate using flour to roll out, I always make far too much mess :oops: :giggle: I pop the gingerbread on some cling film, then cover it with cling film before rolling out.
