Noodle recipes

We have 7kg of noodles to eat, and only have 2 recipes we cook. Have you got any yummy recipes?

We had noodle soup for tea tonight.

Fry a little garlic, chilli and fresh sliced ginger in some oil then add some soy and stock (we use knorr beef stock gel pots), prob about 500ml per person. Bring to a simmer and cook noodles and veg (pak choi, baby corn, tender stem broccoli, spring onion, courgette, shitake mushrooms) in it.

Serve when everything is cooked.

I do one with a softened onion, a couple of garlic cloves,gently fry add stock (we use veggie cubed) and a teaspoon of miso paste. To this I added brocoli florets, pepper, julliene carrots, peas, sweetcorn, baby broad beans (edamame would be better but I didn't have any in)I suppose you could add whatever veg is in the fridge that would work. I also popped some dried seaweed in. And the noodles when everything was still crisp but cooked iyswim.
Went down a storm and tasted like the wagamamas yasai ramen :D
