Best cakes to freeze?

Postby ponygirl » Thu Mar 28, 2013 2:43 pm

Do some cakes freeze better than other? Can I freeze any cakes un-iced?

Trying to stock our freezer with some yummy treats to save money :D

I always have sweet treats in the freezer. Sponge cakes freeze really well as do muffins and cookie dough (I usually roll it into a log so I can slice off as much as I want). They do need to be un-iced.

I have frozen all kinds of cakes and never found any that were horrid once defrosted (even when iced). They are a bit moister imo afterwards but i actually like that and the coldness when they are just defrosted.

@confusinglady

Yes, I've always sliced it fine when frozen. You could always make more smaller logs and defrost the whole log if you are worried it wont slice though.
