CARAMELISED TOMATO AND PEPPER PASTA
Serves 4, takes 30 mins. 3.5 WW points per serving.
1.5 red peppers deseeded and diced
1.5 yellow " " " "
Low fat cooking spray
500g (1lb 2 oz) cherry tomatos (i used salad big tomatos as had no cherry ones)
3 garlic cloves crushed
4 tablespoons of freshly shredded basil (i didn't have this)
250g dried pasta shells (i used pasta twists)
75 g (2 3/4 oz) low fat soft cheese with garlic and herbs (i just used plain low fat soft cheese)

Preheat oven to gas mark 7 / 220 degrees C / 200 degrees C fan asstd.
Spread peppers out on large baking tray and lightly coat with low fat cooking spray and place top shelf oven for 15 mins
place tomatoes in roasting tray/tin, scatter garlic, basil and season with black pepper. Mist with low fat cooking spray and place in oven under tray with peppers on.cook for 10 mins. Stir both trays half way through cooking times.
Meanwhile bring pan of water to boil and cook pasta till tender. Drain pasta and mix with the low fat soft cheese and add peppers and tomato trays into pasta and stir well and divide between 4 warm dishes......YUMMY!!!
