Dressing for halloumi and aubergine stacks

I'm griddling slices of halloumi and aubergine to staock for dinner with a salad and some potato wedges. What dressing would be good on the stacks and/or salad?

Lemon juice, olive oil and wherever herbs you have hanging around.

Or thin some pesto out with a splash of water. Basil works brilliantly with hallouni.

Or a spicey-is, herby tomato sauce...
